Island Grilled Pork Patties
Make sure you don’t overcook the pork—it will get dry and chewy. Top with your favorite salsa or chutney to finish.
SERVES 4
1 pound lean ground pork
1 tablespoon lime zest
1 teaspoon jerk seasoning
½ teaspoon ground allspice
½ teaspoon cayenne pepper
¼ teaspoon garlic salt
2 tablespoons chopped fresh cilantro
1. Clean and oil grill rack and place it about 4 inches from the heat source. Preheat grill to medium-high. Lightly mix together all the ingredients and form into 4 patties, each about 4 ounces. Grill for 7 to 9 minutes per side, turning once, until cooked throughout. Transfer the burgers to a plate and tent with foil to keep warm. Let rest for 1 to 2 minutes to allow the juices to reabsorb. Serve hot.
